How to make Vellayappam / Palappam





  Ingredients

  1. Raw Rice – 2 cups
  2. Cooked Rice – 3/4 cup
  3. Yeast – 1.5 to 2 teaspoon
  4. Sugar –  as needed
  5. Salt – to taste
  6. Thick Coconut Milk – 1/2 cup
  7. Water – as needed

                                           How to make vellayappam

                                             
                                                        Soak the rice for atleast 6 hours or leave it overnight.Wash and drain the rice and keep aside.Dissolve the yeast and 1 tbsp sugar in 1/2 cup of lightly warm water. Keep it aside for ten minutes until it foams.Next, you need to grind the rice in several batches. Grind around two handfuls of raw rice along with a few tablespoons of cooked rice and very little water.Grind until you get a smooth batter.Transfer the batter to large bowl. Continue doing this with the remaining rice.While grinding the last batch, add the yeast solution to the mixie.Leave the batter in a warm place for 6-8 hours. Enusre that the bowl is large enough to prevent the batter from overflowing after fermentation.The batter would have risen after fermentation and will look foamy. Stir the batter and check the consistency. Add 1/4 – 1/2 cup of coconut milk to make a batter of medium consistency. If the batter appears thin after fermentation, skip the coconut milk.Add sugar as per desired sweetness (3-4 tbsp) and salt to taste. Mix everything together.Heat the vellayappm pan or a thick bottomed pan with a lid. Add around 1 large round spoon of batter when hot, and swirl around the pan and close the lid and cook at lower temperature. Remove the Vellayappam from the pan when the sides starts turning to golden color.
Eat while warm with Stew/coconut milk/chicken curry/Kadala curry/Egg curry.

HOW TO MAKE MALABAR FISH CURRY






                                                                INGREDIENTS



  • Fish(Sardine, mackerel or any white fish, cleaned)
  • 1/2 tsp turmeric powder
  • 2 green chillies
  • 1 tbs ginger, cut in small pieces
  • curry leaves, few
  • 1/2 tsp red chili powder
  • 2 to 3 raw mangoes large pieces, chopped lengthwise(depends on the tanginess)
  • 1 small tomato, chopped
  • 1tsp coconut oil



To Grind

  • 3/4 cup coconut, grated
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chilli powder
  • 1/4 tsp cumin seeds



                HOW TO MAKE  MALABAR FISH CURRY


                                                                          Coat the fish pieces with salt and keep aside In a Claypot,cook tomatoes with water adding raw mangoes, turmeric powder, chilli powder, ginger pieces, curry leaves and salt. Meanwhile grind the coconut with turmeric powder, cumin seeds and chilli powder .Add this grind paste to the gravy. Bring this gravy to a boil and then add fish pieces. Cook on low heat till the fish pieces are cooked well.(Do not overcook or stir the fish pieces). Pour 1 tsp coconut oil over the fish curry and garnish with curry leaves.

How to make pavakka (Bitter Gourd) Thoran


                  





Ingredients


  1. Green or Light Yellow Bitter Gourd (Pavakka) – 2 big
  2. Sliced Shallots (Kunjulli/Pearl Onions) – 1/2 cup
  3. Green/Red Chillies – 4 or 5 ( I used both)
  4. Curry Leaves – A sprig
  5. Grated Coconut  – 1 Cup
  6. Crushed Garlic – 4 or 5 cloves
  7. Grated Cumin (Jeera) – 1/2 tsp
  8. Turmeric powder – 1/4 tsp
  9. Red Chilly powder – 1/2 tsp
  10. Oil – 2 tbsp
  11. Mustard Seeds – 1/2 tsp
  12. Salt – to taste

   How to make Pavakka (Bitter Gourd) Thoran


                                                                     
                     Wash the bitter gourd and Slice the bitter gourd into small thin pieces.Mix together coconut, turmeric powder, red chilly powder, cumin and garlic.Heat 2 tbsp oil in a non stick pan and splutter mustard seeds. Add shallots, chillies and curry leaves and saute for a few minutes.Add the sliced bitter gourd pieces and saute for a few minutes.Next add the coconut mixture along with salt to taste and mix everything together.Cover the pan and cook on medium-low flame, stirring occasionally. Do not add water while cooking.After 10-12 minutes, the bitter gourd will be cooked. .

  • 1 onion, finely chopped
  • 1 tsp grated garlic
  • 1-2 slit green chillies

  • 1/2 tsp cumin seeds
  • 1/2 tsp mustard seeds
  • curry leaves
  • 2 tsp vegetable oil

                                                                                 Wash the banana  flowers  adding  a pinch of turmeric powder in water and drain well . Add turmeric powder,onions, garlic, salt,green chilies,coconuts and curry leaves, mix everything together and keep aside. Heat oil in a pan, splutter mustard seeds, cumin seeds and rice. Now add banana flower mixture,
mix well and bring the mixture to the center and cook on low heat covered till done. serve with rice.


How to make Rava Dosa





Ingredients:

Rice Flour - 2 cup
Maida Flour - 3/4 cup
Rava - 1/2 cup
Oil - 1 tsp
Mustard seeds - 1 tsp
Cumin Seeds - 1/2 tsp
Green Chilly cut into small pieces - 2
Ginger sliced - 1 piece
Curry Leaves - 1 stem
Coriander Leaves - 1/2 cup
Small Onion sliced - 1/2 cup
Salt to taste

Method:

Mix the rice flour, maida flour, and rava with salt and water and make a batter like Dosa batter.
 
Keep it for two hours.
 
Heat oil in a pan and splutter mustard seeds and cumin seeds.
 
Saute Green Chilly, Ginger, Curry Leaves, Coriander Leaves and Small Onion.
 
Mix this into the batter and make dosas.


How to make Adai (Dhal Dosa)





Ingredients

1 cup chana dhal
1 cup tuvar dhal
1/4 cup urad dhal
1/4 cup moong dhal
1/4 cup rice
2 green chilli
4 red chilli (dry)
1" piece finely cut ginger
a pinch or two hing
salt to taste
1/2 cup (finely cut) onion
1/2 cup (finely cut) coriander
10-12 curry leaves
1/4 cup grated coconut
oil for frying dosa





How to make Adai (Dhal Dosa)

Soak the dhals together &rice separately for 1 hour. Grind the rice, chillies, curry leaves
& ginger together
Then add the dhals &grind .The mixture should be a thick & smooth dosa batter. Pour in a
vessel &then add hing,salt,onion,coriander & coconut. Mix well.
Heat a tava or pan & pour laladle ful of batter & spread in a circular motion. Spread a
spoon of oil around the dosa turn & cook both sides till well done or crisp (in low flame).
Serve plain or with any sweet/spicy chutney.
A Tips:
To avoid sticking of the dosa (of any kind) add a few drops of oil to the hot pan,then
sprinkle salt & rub well with the cut potion of an onion. Dust the pan free of any traces of
salt. Now make dosas.



How to make Egg Dosa





Ingredients

1 egg per dosa
1/2 cup urad dal
1/2 cup parboiled rice
salt as per taste
black pepper powder as per taste
oil


How to make Egg Dosa

Wash and Soak urad dal and rice for 3 hours .Grind in to thin paste .Cover and keep
aside for 8-10 hours to ferment
Add salt to taste and mix it well .Heat the dosa griddle .Spread the dosa of the 1 big spoon
batter
Break one egg on the dosa .Spread a little .Sprinkle salt and pepper powder .Spread 1 tsp
oil around the dosa
Cook till golden brown .Remove and serve with coconut chutney .Repeat the process from
point 6 for the rest of the batter



HOW TO MAKE IDLI



                   The idli  is the most common dish in South India.Idli is eaten as a breakfast or a snack with several accompaniments like chutneys, sambar, or mixtures of crushed dry spices such as milagai podi.

                                 A variety of idlis are experimented these days, namely, standard idli, mini idlis soaked in sambar, rava idli, Kancheepuram idli, stuffed idli with a filling of potato, beans, carrot and masala, ragi idli, pudi idli with the sprinkling of chutney pudi that covers the bite-sized pieces of idlis, malli idli shallow-fried with coriander and curry leaves, and curd idli dipped in masala curds.




Ingredients:

Long grain Rice - 3 cups
Urad Dal - 1 1/2 cups
Fenugreek seeds - 1 tsp
Salt to taste


HOW TO MAKE IDLI



1)Wash and soak rice and urad dal separately for 3 to 4 hours along with fenugreek seeds.
2)Grind the urad dal and rice separately and mix them well.
3)Allow the batter to ferment overnight.
4)Grease the idli mold with oil and pour the batter to these molds.
5)Steam it in the idli steamer for 10 minutes.
6)Serve hot with Chutney and Sambar.


How to make maida dosa





Ingredients:


Maida - 1/2 cup
Egg - 1
Grated Coconut - 1/4 cup
Salt - 1 tsp
Oil - as required


How to make maida dosa


Mix all the ingredients.

Add oil to the tava and spread the maida batter on the tava adding some more oil on the top.

Cook dosa on both sides and serve hot.


How to make Vegetable dosa





Ingredients:


Dosa Batter - prepare as per Dosa Recipe
Vegetables :
Peas, carrots, beans, tomato - as required
Green chillies - 5-7 nos
Coriander leaves - a few
Salt - as required


How to make Vegetable dosa

Cut all vegetables into very small cubes.

Half boil these vegetables in a vessel.

Add green chillies and coriander leaves.

Add salt to taste and mix well.

Heat Dosa tava. Spread little oil on the tava.

Make dosa like the regular ones.

Add the vegetables on the top of the Dosa and cook both sides of the dosa.

Serve with tomato chutney.

How to make Spinach Dosa




Ingredients

wheat flour - 1 cup
besan - 1 cup
chopped spinach - 200 gms.
onion - 1 (big)
green chillies - 5 (chopped)
curry leaves - 4-5 leaves
salt to taste


How to make Spinach Dosa


In a mixing bowl, put all the ingredients and mix them well with water to form a thin batter.
Then keep it aside for 5-10 mts.
Heat a non stick pan. Pour the batter to form a dosa. Drop a spoon of oil on the sides to
make it crisper. Once its cooked on one side, turn the dosa to the other side so that it gets
cooked well.
Repeat the same process for other dosas also.
Serve the dosa with butter.


How to make BANANA DOSA




INGREDIENTS

250g all-purpose flour (maida)
4 bananas, mashed
1 egg
75g sugar
2g cardamom powder
1/4 tsp baking powder
1 1/2 glass milk
50g oil

           How to make BANANA DOSA


Beat the egg well and to this, add sugar milk and mashed bananas. These ingredients
can also be mixed in a blender.
To the all-purpose flour, add the above banana mixture and mix well to form dosa batter.
Now add cardamom powder and baking powder to the batter and mix well.
Heat a flat pan and make thin dosas. Fry on both sides until golden brown in color with
little oil.
Serve hot with any juice.



How to make Soyabean Dosa



Ingredients

1) soyabean-soaked in water for 8 hours,
2) ginger
3) salt
4) chillies
5) rice flour-1-2 tsp, to increase the spreadability, optional.


How to make 
Soyabean Dosa

Grind the soyabeans in a grinder, with ginger, salt and chillies to taste.
Add water till the consistency is of idli-atta.
Heat the coated pan. Pour soya mixture on the hot pan, about 2 large spoonful. Spread
with a spoon. Cover. Cook for 2 min, on medium heat.
Invert and cook other side, without cover.
Your soya dosa is ready!
Additions:
Adding Onions, Tomatoes, Grated Carrots, Grated Radish, Cumin seeds make the dosa
more delicious. Oil can be sprayed on pan while cooking, but is not a must.




How to make Rava Uppuma



            

Ingredients:


Rava - 3 cups
Small Onions - 4
Green Chilly - 2
Chopped Ginger - 1 tsp
Coconut shredded - 1 cup
Mustard Seeds - 1 tsp
Urad Daal (Uzhundu Parippu) - 1 tsp
Curry leaves - 1 stem
Dry red chillies - 2
Salt to taste
Water - 3 cups
Oil - 2 tsp

Method:

1)Heat the oil,add mustard and urud dal.

2)When the seed starts spluttering, add curry leaves and dry red chillies.

3)Add the onions and green chilly to this and fry for some time.

4)Add water and salt. When the water starts boiling add the rava (semolina) to this stirring continuously to avoid the formation of lumps.

5)Add coconut to the Uppuma when the rava thickened and mix well.

6)Serve hot with Papad or Ripe Bananas.



How to make Bread Carrot Uppuma




Ingredients:

Bread - 4 pieces
Carrot - 1 (big)
Button Onion (Shallots) - 3 nos
Green Chilly - 1
Dry red Chilly - 1
Curry Leaves - 1 stem
Urad Dal - 1 tsp
Mustard Seeds - 1 tsp
Oil - 2 tbsp
Salt - as to taste

How to make Bread Carrot Uppuma

Mash the bread pieces into very small pieces.
 

Grate the carrots. Heat oil in a pan.
 

Splutter the mustard seeds, urad dal, dry red chilly and the curry leaves.
 

Add the chopped onions and fry for some time.
 

Add the chopped carrots also to this and cook for some time.
 

Add salt and the bread crumbs.
 

Mix well and serve hot.


How to make Aval Uppuma




Ingredients:



Thick Aval - 2 cups
Coconut shredded - 1/2 coconut
Oil - 2 tsp
Mustard Seeds - 1 tsp
Urad Daal (Uzhundu Parippu) - 1/2 tsp
Dry red chillies - 2
Curry leaves - 1 stem
Asafoetida - a pinch

How to make Aval Uppuma 

Wet the aval and keep for 5 minutes.

Heat the oil, add mustard and urud dal.

When the seed starts spluttering, add curry leaves and dry red chillies.

Add aval and coconut along with required quantity of salt and mix well. Add Asafoetida also.

Ingredients:


Raw rice - 2 cups
Coconut shredded - 1 cup
Salt to taste
Water


Method:

Soak the rice for two hours and strain it.

Spread the rice in a cloth or a plate and allow them to dry.

Grind the dried raw rice to a fine powder in the mixer.

Mix salt in water and add the water little by little to the rice flour and mix it.

Put the flour to the puttu maker adding shredded coconut in between.

Boil water in the pot under the cylinder and place the puttu maker and cook over steam.


How to make Corn Flour Puttu





Ingredients:


Rice Flour - 1 cup
Cornflour - 1 cup
Coconut shredded - 1 cup
Salt to taste
Water

Ingredients

parboiled rice-1 cup
rice-1 cup
aval (poha, the thick variety)-1cup
blackgram dhal-1/4cup
salt-to taste

How to make Aval Idli

Clean and soak the ingredients separately overnight.
Grind to make the batter similar to that of the regular idli batter.
Let it ferment for a whole day kept in a warm place.
Mix the batter thoroughly before pouring on to the idli plates.
Steam for 10 minutes and serve with chutney



How to make Khusboo Idli






Ingredients

idly rice-4 tea cups
sago [saboodana] -1 teacup
fenugreek -1 tsp
black gram dhal-2 tsp
baking soda-1/2 tsp
salt-2 tbsp

tomoto Chutney 

tomatoes [medium size]-3
onion [medium]-1
salt-1 1/2 tsps.
red chilly powder-2 tsps.
saunf-1/2 tsp.
oil- 2 tsps.
Seasoning :
mustard, urad dhal & curry leaves.

How to make Khusboo Idli

Clean & soak rice, dhal, fenugreek separately and sago separately for 4 hours.
Grind all the ingredients into a fine paste and add salt and ferment for 12 hours in a warm
place.
At the time of cooking, add in the baking soda and mix well.
Grease the idly moulds with oil, Pour the batter and steam for 8 to 10 minutes.
Serve hot with tomato chutny



How to make Andhra mutton curry



ingredients:

1. Mutton – ½ kg
2. Green cardamoms – 3
3. Cloves – 6
4. Cinnamon - small stick
5. Onion (big) – 1 finely chopped
6. Green chillies – 3 slit into half
7. Coriander leaves – for garnishing
8. Oil - 4 tbsp

Marinate ingredients:

1. Curd – 1 cup
2. Ginger garlic paste – 1tsp
3. Chilli powder – 1 tsp
4. Coriander powder – 1 tsp
5. Turmeric powder – ½ tsp
6. Garam masala – ½ tsp
7. Cumin powder – ½ tsp
8. Salt – to taste



How to make Andhra mutton curry 


Clean and wash the mutton pieces.

Marinate the mutton pieces with marinate ingredients for 1 hour.

Take a pan and heat with 4 tbsp of oil.

Add the green cardamoms, cloves and cinnamon. 

Sauté for few secs.

Then add the chopped onions and green chillies. 

Sauté till the onion colour turn into golden brown colour.

Then add the marinated mutton pieces and mix well.

Cook until the oil separates on medium flame.

Add 2 cups of water and cover with a lid and cook till the mutton is tender.

Finally garnish with coriander leaves.

Serve hot with rice, paratha, roti etc…
