How to make egg and potato curry

A common recipe that we can make very simple.


Ingredients

Eggs           4
Potato      225gm
Onions     115gm
Red chilles   5gm
Coriander   10gm
Turmeric   1gm
Coconut     1/2
Cinnamon cloves    1/2 gm
Green chillies       2
Ginger           2gm
Curry leaves     1 sprig
Salt    for taste
Vinegar    10 ml
Oil   30 ml

How to make egg and potato curry

1) boil eggs

2) cut all vegetables
3) roast red chillies, coriander and turmeric and grind to a fine paste
4)grind coconut to a smooth paste
5) heat half of the oil sauté sliced onions leaving aside a few slices for tempering
6) add green chilly, ginger and ground spices. when all fried, add ground coconut and fry for 2 minutes.
7) add potatoes, water and salt and cook till potato are tender.
8) add eggs , cut into halves and vinegar. remove from fire
9) heat remaining oil in a fry pan. brown onions, crushed cloves and cinnamon. Add curry leaves and pour over curry
