How to make scotch broth

Scotch broth is a filling soup, originating in Scotland . The main ingredients are usually barley, stewing or braising cuts of lamb, mutton or beef, root vegetables such as carrots, turnips or swedes and dried beans. Cabbage and leeks are often added shortly before serving to preserve their texture, color and flavors.

Ingredients

1) scrag end of mutton
2) pearl barley
3) stock
4) parsely
5) carrot
6) turnip
7) onions
8) celery
9) pepper
10) salt


How to make scotch broth

1) wash barley
2) clean and cut meat
3) soak in cold stock for 15 minutes and cook for 1 hour
4) skim from broth and add diced vegetables,barley and seasoning and simmer for 2 hours.
5) remove meat and dice
6) return to pan ; add more seasoning if necessary
7) remove all fat and serve hot
